- 1 tablespoon honey
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon poultry seasoning
- 1/4 teaspoon smoked paprika
Instructions
1. Pat turkey breast dry with paper towels. If not in a mesh bag, truss with kitchen string.
2. In a small bowl, mix salt, poultry seasoning, rosemary, paprika, onion powder, nutmeg, ginger, and allspice.
3. Rub dry rub all over turkey. Wrap in plastic and refrigerate overnight.
4. Preheat oven to 325ยฐF (160ยบC). Place a wire rack in a roasting pan and pour in 3 cups chicken broth.
5. Remove turkey from plastic and place on rack. Mix melted butter and honey, then slather over turkey.
6. Loosely tent the roasting pan with foil and roast for 1 hour.
7. While roasting, mix together melted butter, honey, sugar, salt, poultry seasoning, and smoked paprika. Let sit.
8. After 1 hour, remove foil. Carefully pour in 1 cup water and any remaining broth.
9. Increase oven to 350ยฐF (180ยบC). Pat sugar mixture over top of turkey.
10. Roast uncovered for 15 minutes or until internal temp reaches 150ยฐF (65ยบC). Tent with foil if browning too fast.
11. Remove from oven, cover with foil, and rest for 15 minutes before slicing.
Notes
Use turkey breast with skin for best flavor and moisture.
Donโt allow the broth to touch the turkey. Adjust based on your roasting pan depth.
You can make the dry rub your own with spices like cinnamon or cayenne for variation.
The sweet pan drippings are perfect for drizzling over the carved turkey.
Leftovers are great for sandwiches with honey mustard or cranberry sauce.
