A comforting blend of creamy mashed potatoes in a flaky crust, perfect for cozy dinners or family gatherings.
Ingredients
- 4 large potatoes, peeled and chopped
- 2 tablespoons butter
- 1/2 cup milk
- 1 cup shredded cheese (cheddar or your favorite)
- Salt and pepper, to taste
- 1 egg, beaten for egg wash
- 1 prepared pie crust (store-bought or homemade)
- Fresh herbs (like chives or parsley) for added flavor, optional
Instructions
1. Place the peeled and chopped potatoes into a large pot. Cover them with water and add a pinch of salt. Bring to a boil and cook until tender, about 15–20 minutes.
2. Drain the potatoes and return them to the pot. Add butter and milk. Mash until creamy, then stir in the cheese, salt, and pepper. Allow to cool for a few minutes.
3. Preheat your oven to 375°F (190°C). Roll out your pie crust and place it into a pie dish.
4. Spoon the mashed potato mixture into the crust, smoothing it out evenly.
5. If you have a second pie crust, place it on top and seal the edges. Brush the top with the beaten egg for a golden finish. If you’re keeping it open-faced, simply sprinkle some fresh herbs on top.
6. Bake for 25–30 minutes, or until the crust is golden brown.
7. Allow the pie to cool for 10 minutes before slicing. Serve warm.

You can substitute sweet potatoes for a different flavor profile.
Add cooked vegetables like peas or carrots for variety.
Incorporate herbs such as thyme or rosemary for extra depth.
