Ingredients
- 1 (3–4 pound) boneless, skin-on turkey breast
- 2 tablespoons olive oil
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat oven to 375°F (190°C).
2. Pat the turkey breast dry with paper towels.
3. In a small bowl, mix olive oil, rosemary, thyme, garlic, salt, and black pepper to form a paste.
4. Rub the herb paste evenly all over the turkey breast.
5. Place the turkey breast in a roasting pan.
6. Roast for 1 hour 15 minutes to 1 hour 30 minutes, or until a meat thermometer reads 165°F (74°C) in the thickest part.
7. Let rest for 10–15 minutes before slicing and serving.
Notes
For extra juicy results, brine the turkey breast a few hours or overnight before roasting.
Feel free to add herbs like sage or marjoram to the garlic herb mixture for added flavor.
If the skin browns too quickly during roasting, loosely tent the turkey with foil.
