Description
This soup is the ultimate comfort food when you’re craving hamburgers but want a healthier low carb version. It’s gluten-free, dairy-free, low carb, and high in protein.
Ingredients
- 1 lb lean ground beef
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 4 cups cauliflower florets, cut into pieces
- 1 small carrot, diced
- 1 celery stalk, sliced
- 14 oz can chopped tomatoes
- 6 cups beef broth
- 1 cup yellow string beans
- 1 tsp Italian seasoning
- Salt and black pepper, to taste
- Chopped parsley, for serving
Instructions
1. Place a large pot or Dutch oven over medium-high heat. Add the ground beef, chopped onion, and garlic.
2. Break the beef apart and cook until browned, about 7-10 minutes.
3. Add the cauliflower, carrot, celery, chopped tomatoes, beef broth, string beans, Italian seasoning, salt, and pepper. Stir to combine.
4. Bring to a boil, then reduce the heat and simmer for about 15 minutes, or until the vegetables are tender.
5. Ladle the soup into bowls and top with chopped parsley. Serve hot.

This soup is naturally gluten-free, dairy-free, and low in carbs.
For extra richness, you can add a splash of olive oil or a sprinkle of nutritional yeast.
Leftovers can be stored in an airtight container in the fridge for up to 4 days.
