Description

These perfectly soft and chewy Lucky Charms sugar cookies are not only magically delicious, they literally melt in your mouth. They’re rich, and buttery, and have just the right amount of sweetness. A fun and flavorful St. Patrick’s Day treat for all cookie lovers.


Ingredients

  • 1/2 cup unsalted butter (room temperature)
  • 1 cup sugar
  • 1 egg
  • 1 egg yolk
  • 1 tsp vanilla extract
  • 1 3/4 cup flour (all-purpose, spooned and leveled)
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 cup Lucky Charms marshmallows (plus extra for pressing into the top)


Instructions

1. Preheat oven to 350 degrees and line three baking sheets with parchment paper.

2. In a medium size bowl, cream butter and sugar together with an electric mixer on medium speed for 2 minutes, until light and fluffy.

3. Beat in egg, egg yolk, and vanilla extract and mix for an additional minute, just until incorporated.

4. Add the flour, baking soda, and salt to the bowl and mix until just combined.

5. Fold in the Lucky Charms marshmallows, leaving some to press into the tops of the cookie after baking.

6. Using a 3 tablespoon cookie scoop, scoop dough onto lined baking sheets.

7. Bake for 10 minutes, rotating the pan halfway through to ensure even baking.

8. Let cookies cool on the cookie sheet for 5 minutes before transferring to a wire rack to cool completely.

9. Store cookies in airtight container for 3-5 days or freeze for up to 3 months.
