Mandarin Spinach Pasta Salad: Simple & Amazing Recipe

Description

This mandarin spinach pasta salad is tossed with a flavorful homemade teriyaki dressing. It’s quick, easy, healthy, and perfect to enjoy all summer long!


Ingredients

  • 1/3 cup teriyaki sauce
  • 1/3 cup rice wine vinegar
  • 1/3 cup olive oil
  • 2 tablespoons sesame oil
  • 2 tablespoons honey
  • 1 teaspoon minced garlic
  • 1/2 teaspoon minced ginger
  • 1/4 teaspoon salt (to taste)
  • 1/8 teaspoon black pepper (to taste)
  • 16 ounces bow tie pasta
  • 4 cups fresh baby spinach
  • 1 cup diced red bell pepper
  • 15 ounces mandarin oranges, drained
  • 1/2 cup sliced almonds
  • 1/4 cup fresh cilantro, chopped


Instructions

1. In a small bowl, combine the teriyaki sauce, rice wine vinegar, olive oil, sesame oil, honey, minced garlic, minced ginger, salt, and black pepper. Stir well, cover, and refrigerate until ready to use.

2. Bring a large pot of water to a boil. Add the bow tie pasta and cook according to package directions.

3. Drain the pasta and rinse under cold water to cool. Set aside.

4. While the pasta cooks, prepare the spinach, red bell pepper, mandarin oranges, almonds, and cilantro.

5. In a large mixing bowl, combine the cooled pasta, spinach, red bell pepper, mandarin oranges, sliced almonds, and cilantro.

6. Toss the salad together, then drizzle with the desired amount of teriyaki dressing and toss again to coat. Serve immediately.


Notes

For best flavor, chill the dressing for at least 30 minutes before serving.

Add grilled chicken for extra protein and to make it a heartier main dish.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
