Description
A creamy and comforting chicken soup that combines tender chicken, sun-dried tomatoes, and cheese tortellini, perfect for a cozy dinner.
Ingredients
- 1 lb boneless skinless chicken breast, diced
- 1 tbsp olive oil
- 1 tsp Italian seasoning
- 1/2 tsp crushed red pepper flakes (optional for heat)
- 1/2 tsp garlic powder
- 1 small onion, diced
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- 1 (9 oz) package refrigerated cheese tortellini
- 2 cups baby spinach, roughly chopped
- 1/2 cup grated parmesan cheese
- Salt & black pepper to taste
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced chicken, season with Italian seasoning, garlic powder, salt, and pepper. Cook until golden brown.
2. Toss in diced onion and garlic and cook until softened. Stir in sun-dried tomatoes.
3. Pour in the chicken broth and bring it to a boil. Reduce heat and let it simmer for 10 minutes.
4. Stir in heavy cream and tortellini. Let it simmer until the pasta is tender.
5. Add in chopped spinach and parmesan cheese. Stir until everything melts together.
Notes
This soup is perfect for a romantic dinner or a cozy family meal.
Feel free to adjust the spice level by adding more or less crushed red pepper flakes.
For a lighter version, you can substitute heavy cream with half-and-half.
