Description

30-minute Mediterranean Chicken Bowls are a quick and healthy meal option that brings together succulent chicken, fresh vegetables, and a creamy tzatziki sauce. Perfect for busy weeknights or meal prep, these bowls are low-carb, gluten-free, and keto-friendly.


Ingredients

  • 1 lb skinless, boneless chicken thighs
  • 1 tsp rosemary
  • 1 tsp black pepper
  • 1 tsp coriander
  • 1 tbsp olive oil
  • 1 small cucumber
  • 4 roasted jalapeños or hot peppers
  • 1.5 cups Greek yogurt
  • 3 garlic cloves
  • Salt to taste
  • 1/2 cup olives
  • 1 lemon


Instructions

1. Prepare the chicken by cutting it into bite-sized pieces and seasoning with rosemary, black pepper, coriander, and minced garlic.

2. In a skillet over medium heat, add olive oil and cook the seasoned chicken until fully cooked.
