Description

This Mediterranean Chicken Stir Fry is the perfect weeknight dinner that combines tender chicken, colorful vegetables, and authentic Mediterranean flavors. Ready in just 30 minutes, this one-pan recipe is healthy, satisfying, and bursting with fresh herbs, lemon, feta, and olive oil.


Ingredients

  • 1.5 lbs chicken breasts, boneless & skinless, cut into bite-sized pieces
  • 3 tablespoons extra virgin olive oil, divided for cooking
  • Salt & black pepper, to taste
  • 2 medium zucchini, sliced into half-moons
  • 2 red bell peppers, diced into chunks
  • 1 large red onion, sliced into strips
  • 2 cups cherry tomatoes, halved
  • 1 cup Kalamata olives, pitted and halved
  • 4 cloves garlic, minced
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 teaspoons dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 lemon, juice only
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh parsley, optional garnish


Instructions

1. Prep all ingredients and chop everything before cooking to ensure a smooth cooking process.

2. Heat 1.5 tablespoons of olive oil in a large skillet or wok over medium-high heat.

3. Season chicken with salt and pepper, then sear in the hot pan for 6–8 minutes until golden and cooked through. Remove and set aside.

4. Add remaining olive oil to the pan, then sauté red onion and garlic for 2 minutes until fragrant.

5. Add zucchini and red bell peppers, and cook for another 4–5 minutes until vegetables start to soften.

6. Stir in cherry tomatoes, sun-dried tomatoes, and dried herbs (oregano, basil, thyme). Cook for 2 minutes.

7. Return the cooked chicken to the pan and toss to combine with vegetables.

8. Add lemon juice and Kalamata olives, and stir everything well.

9. Sprinkle crumbled feta over the top and garnish with fresh parsley if desired.

10. Serve hot and enjoy your flavorful Mediterranean Chicken Stir Fry.
