Ingredients
- 4 boneless, skinless chicken breasts
- 1 cup mayonnaise
- 1⁄2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1⁄2 tsp ground black pepper
- 1 tsp seasoned salt (or to taste)
- 1 tsp dried Italian herbs or dried thyme (optional)
- 1 cup panko bread crumbs (optional for a crispy top)
- Fresh parsley or chives for garnish (optional)
Instructions
1. Preheat your oven to 375°F (190°C).
2. Grease a 9×13 inch baking dish or line it with aluminum foil for easy cleanup.
3. Pat the chicken breasts dry with paper towels and arrange them in the prepared baking dish.
4. In a medium bowl, mix together the mayonnaise, Parmesan cheese, garlic powder, ground black pepper, seasoned salt, and Italian herbs (if using) until smooth.
5. Spread the mayonnaise mixture evenly over each chicken breast, making sure they are completely covered.
6. If you prefer a crispy topping, sprinkle panko bread crumbs over the top of the mayonnaise mixture on the chicken breasts.
7. Place the baking dish in the preheated oven and bake for 35 to 40 minutes, or until the chicken is cooked through (internal temperature should reach 165°F or 74°C) and the tops are golden brown.
8. For an extra golden finish, you can broil the chicken for 2-3 minutes after baking. Keep an eye on it to prevent burning.
9. Remove from oven, let it rest for a few minutes, and garnish with freshly chopped parsley or chives before serving, if desired.

The mayonnaise mixture keeps the chicken incredibly moist and tender.
For a healthier version, use Greek yogurt instead of mayonnaise.
