- 1 cup cottage cheese
- ½ cup sour cream
- 1 (10.5-oz) can Unsalted Cream of Chicken Soup
- ¼ tsp garlic powder
- ¼ tsp dried onion powder
- 1 sleeve Ritz crackers, crushed
- 5 Tbsp butter, melted
Instructions
1. Preheat oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray and set aside.
2. Combine chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Spread into the prepared pan.
3. Combine crushed crackers and melted butter in a bowl. Sprinkle evenly over the chicken mixture.
4. Bake uncovered for 30 to 40 minutes, until bubbly and golden on top.
Notes
Use a rotisserie chicken for quick prep of the cooked chicken.
Make sure the cream cheese is very soft so it incorporates fully—microwave it for 15 to 20 seconds if needed.
You can prepare this casserole in advance and refrigerate or freeze it before baking.
To bake from frozen, thaw completely in the refrigerator overnight, then bake as directed.
For a gluten-free version, use gluten-free cream of chicken soup and crushed pork rinds instead of Ritz crackers.
Using unsalted cream of chicken soup helps control the sodium in this recipe.
