Description
This homemade Olive Garden Chicken Gnocchi Soup is even better than the restaurant version! It’s rich, creamy, and full of shredded chicken, pillowy gnocchi, and hearty vegetables—ready in under 30 minutes!
Ingredients
4 tablespoons butter
1 small yellow onion, diced
1 cup sliced celery
1 cup matchstick carrots
6 cloves garlic, minced
2 teaspoons Italian seasoning
1/2 teaspoon rubbed sage
1/4 cup all-purpose flour
4 cups chicken broth
1 1/2 cups heavy cream
1 pound potato gnocchi
2 cups shredded rotisserie chicken
1 1/2 cups chopped fresh spinach
1 teaspoon balsamic vinegar
Kosher salt
Fresh cracked pepper
Instructions
1. Heat 4 tablespoons butter in a large pot over medium heat.
2. Add 1 small diced onion, 1 cup sliced celery, and 1 cup matchstick carrots along with a couple larger pinches of salt and pepper. Cook, stirring occasionally for about 8 minutes.
3. Add 6 cloves minced garlic, 2 teaspoons Italian seasoning, 1/2 teaspoon rubbed sage, and a couple pinches of salt and pepper. Cook for another minute, stirring frequently.
4. Sprinkle in 1/4 cup flour and cook for another minute, stirring frequently.
5. Stir in 1/4-1/2 cup chicken broth to deglaze the pan and scrape all the yummy bits off the bottom.
6. Stir in the remaining chicken broth along with the 1 1/2 cups heavy cream and a few pinches of salt and pepper.
7. Bring the soup to a simmer over medium-high heat. Add 1 pound potato gnocchi and 2 cups shredded chicken.
8. Gently simmer over medium-low heat for about 3-5 minutes or until the gnocchi is cooked through.
9. Stir in 1 1/2 cups fresh spinach and 1 teaspoon balsamic vinegar. Stir until the spinach wilts.
10. Season to taste with salt and pepper and enjoy!
Notes
Add your favorite veggies! Red bell pepper, broccoli, mushrooms, corn, chopped kale, or peas all work well in this soup.
Experiment with herbs! Oregano, thyme, rosemary, or fresh parsley can be added for extra flavor.
Don’t overcook the gnocchi. Simmer just until it’s tender and pillowy.
Season as you go! Salt and pepper each layer to enhance flavor throughout the soup.
