Ingredients
- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 3 cloves fresh garlic, minced
- 8 oz short pasta (e.g., penne or rotini)
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 2 cups low-sodium chicken broth
- 2 cups fresh spinach
- 2 tsp Italian seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
1. In a large pot over medium heat, add olive oil and sauté diced chicken seasoned with salt and pepper until golden brown (7-10 minutes).
2. Add minced garlic and Italian seasoning; sauté for an additional minute until fragrant.
3. Pour in pasta and chicken broth; bring to a gentle boil. Reduce heat and simmer until pasta is al dente (10-12 minutes).
4. Stir in heavy cream and Parmesan cheese until combined.
5. Fold in fresh spinach and let wilt for a couple of minutes.
6. Serve warm with extra Parmesan on top.
Notes
You can substitute the spinach with kale or arugula for a different green.
Add red pepper flakes for a spicy kick.
To make it even creamier, stir in a tablespoon of cream cheese along with the Parmesan.
