Description

One Pot Creamy Parmesan Chicken Pasta is a comforting and delightful dish that effortlessly combines tender chicken, rich creamy sauce, and perfectly cooked pasta—all in one pot. This recipe is perfect for busy weeknights or family gatherings, offering a satisfying meal with minimal cleanup.

Ingredients

  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 8 oz short pasta (e.g., penne or rotini)
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 cups low-sodium chicken broth
  • 2 cups fresh spinach
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

1. In a large pot over medium heat, add olive oil and sauté diced chicken seasoned with salt and pepper until golden brown (7-10 minutes).

2. Add minced garlic and Italian seasoning; sauté for an additional minute until fragrant.

3. Pour in pasta and chicken broth; bring to a gentle boil. Reduce heat and simmer until pasta is al dente (10-12 minutes).

4. Stir in heavy cream and Parmesan cheese until combined.

5. Fold in fresh spinach and let wilt for a couple of minutes.

6. Serve warm with extra Parmesan on top.

Notes

You can substitute the spinach with kale or arugula for a different green.

Add red pepper flakes for a spicy kick.

To make it even creamier, stir in a tablespoon of cream cheese along with the Parmesan.
