Description
This One-Pot Turkey Stroganoff is a lighter twist on the classic comfort dish, made with ground turkey, mushrooms, egg noodles, and a creamy, flavorful sauce—all in a single pot for easy cleanup.
Ingredients
- 1 lb ground turkey
- 1 tbsp olive oil
- 1 medium onion, diced
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- 3 cups low-sodium chicken broth
- 2 cups egg noodles
- 1 cup sour cream
- 2 tbsp all-purpose flour
- 1 tbsp Worcestershire sauce
- Fresh parsley, chopped, for garnish (optional)
Instructions
1. In a large pot or deep skillet, heat the olive oil over medium heat.
2. Add the ground turkey, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes. Season with salt and pepper. Remove the turkey from the pot and set aside.
3. In the same pot, add the diced onion and sliced mushrooms. Sauté for 5-6 minutes until the onions are translucent and the mushrooms are tender.
4. Add the minced garlic, dried thyme, and paprika. Cook for an additional 1-2 minutes until fragrant.
5. Pour in the chicken broth and bring to a simmer.
6. Add the egg noodles, stirring to combine. Cover and cook for about 8-10 minutes or until the noodles are tender and have absorbed most of the liquid.
7. In a small bowl, mix the flour with a few tablespoons of the warm broth from the pot to create a slurry. Stir until smooth.
8. Once the noodles are cooked, stir in the turkey, Worcestershire sauce, and the flour slurry.
9. Slowly add the sour cream, stirring until well combined and creamy. Cook for an additional 2-3 minutes until heated through.
10. Taste and adjust seasoning if necessary.
11. Serve hot, garnished with chopped fresh parsley if desired.

Protein Variations: Substitute ground turkey with ground beef, chicken, or a plant-based protein for a different twist.
