Description

A moist and flavorful cake featuring the perfect blend of orange, ginger, and honey. This warmly spiced dessert is perfect for holidays, afternoon tea, or any special occasion.

Ingredients

Dry Ingredients:

  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp ground ginger
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt

Wet Ingredients:

  • 1/2 cup unsalted butter (melted)
  • 3/4 cup raw honey
  • 2 large eggs
  • 1 cup fresh orange juice
  • Zest of 2 oranges
  • 1 tbsp grated fresh ginger

Optional Glaze:

  • 2 tbsp honey
  • 2 tbsp orange juice

Instructions

1. Preheat oven to 350°F (175°C) and grease a baking pan.

2. In a medium bowl, whisk together flour, baking soda, ground ginger, cinnamon, nutmeg, and salt.

3. In a large bowl, mix melted butter, honey, and eggs until combined.

4. Stir in fresh orange juice, orange zest, and grated ginger.

5. Gradually fold the dry ingredients into the wet ingredients until just combined. Do not overmix.

6. Pour batter into the prepared baking pan and smooth the top.

7. Bake for 40–45 minutes, or until a toothpick inserted into the center comes out clean.

8. If using, mix glaze ingredients and brush over the warm cake for added moisture and flavor.

9. Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely before serving.

Notes

For a stronger citrus note, add more orange zest or a drop of orange extract.

Serve with whipped cream, vanilla ice cream, or a citrus glaze for extra indulgence.

Store in an airtight container at room temperature for 3 days, or freeze for up to 3 months.
