A comforting and easy weeknight dinner filled with cheesy goodness and a crispy breadcrumb coating, perfect for both kids and adults.
Ingredients
- 4 pieces boneless, skinless chicken breasts
- 4 slices ham (turkey or chicken ham can be used)
- 4 slices Swiss cheese (or provolone or cheddar)
- 1 cup breadcrumbs (seasoned preferred)
- 1/2 cup all-purpose flour
- 2 large eggs
- Salt and pepper to taste
- Cooking spray or olive oil as needed
Instructions
1. Preheat your oven to 375°F (190°C).
2. Season the chicken breasts generously with salt and pepper.
3. Layer each chicken breast with a slice of ham and a slice of Swiss cheese.
4. Roll the chicken breasts tightly like a burrito and secure with toothpicks.
5. Prepare a breading station with three shallow dishes: flour, eggs mixed with Dijon mustard, and breadcrumbs.
6. Dredge each chicken roll in flour, dip in the egg mixture, then coat with breadcrumbs.
7. Place chicken rolls seam side down in a greased baking dish.
8. Spritz the tops with cooking spray or drizzle with olive oil.
9. Bake for 25–30 minutes, until golden brown and internal temperature reaches 165°F (75°C).
10. Remove toothpicks, garnish if desired, and serve warm.
Notes
Consider adding sautéed spinach or sun-dried tomatoes inside the rolls for extra flavor. Let the chicken rest after baking to retain juiciness. Serve with a light salad or roasted vegetables for a balanced meal.
