Ingredients
- 8 chicken thighs
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 15 cloves garlic
- 3 sprigs rosemary leaves
Instructions
1. Preheat the oven to 400°F (205°C).
2. Pat the chicken thighs dry with a paper towel.
3. Sprinkle salt and black pepper evenly over each chicken thigh.
4. Drizzle olive oil over the chicken and rub to coat each piece thoroughly.
5. Place the seasoned chicken thighs into a baking pan.
6. Add the rosemary leaves and garlic cloves to the pan around the chicken.
7. Bake at 400°F for 30 minutes.
8. Reduce the oven temperature to 375°F (190°C) and continue baking for another 20 minutes, or until the chicken is tender and fully cooked.
9. Remove the chicken from the oven, cover with foil, and let rest before serving.
10. Garnish with fresh rosemary leaves and serve warm.
Notes
For best results, make sure the chicken thighs are completely dry before seasoning to help the skin get crispier in the oven.
Use bone-in, skin-on thighs for maximum flavor and moisture.
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months.
To reheat, bake at 350°F for 10–15 minutes or until heated through. Reheating in an air fryer can help retain crispiness.
