Description

This Slow Cooker Greek Chicken is a flavorful and tender dish infused with classic Mediterranean herbs and lemon, perfect for an easy weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 1 tablespoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 cup chicken broth
  • 1/2 cup kalamata olives, pitted and halved
  • 1 cup cherry tomatoes, halved
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

1. Place chicken breasts into the slow cooker.

2. In a small bowl, whisk together olive oil, garlic, lemon juice, lemon zest, oregano, thyme, rosemary, salt, and pepper.

3. Pour the mixture over the chicken, coating evenly.

4. Add chicken broth, olives, and cherry tomatoes to the slow cooker.

5. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until chicken is cooked through and tender.

6. Garnish with fresh parsley before serving.


Notes

Serve over rice, quinoa, or with warm pita bread for a complete meal.

Leftovers store well in the fridge for up to 3 days.

For added flavor, marinate the chicken in the herb mixture for a few hours before slow cooking.
