Description

Warm, hearty, and packed with comforting flavors, this Slow Cooker Hamburger Noodle Soup is the ultimate feel-good meal. Tender ground beef, aromatic vegetables, and savory broth come together effortlessly in the slow cooker, making this an easy one-pot dish perfect for chilly evenings. The addition of egg noodles soaks up all the rich flavors, creating a bowl of pure comfort.

Ingredients

  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 2 cups water
  • 2 carrots, peeled and sliced
  • 2 ribs celery, sliced
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups uncooked egg noodles

Instructions

1. In a skillet over medium heat, cook ground beef until browned.

2. Drain excess fat and set aside.

3. Add chopped onion and minced garlic to the skillet.

4. Cook until the onion turns translucent, about 5 minutes.

5. Transfer the beef mixture to a slow cooker.

6. Stir in beef broth, diced tomatoes, water, carrots, celery, basil, parsley, salt, and black pepper.

7. Cover and cook on low for 6–8 hours or high for 3–4 hours to let flavors meld together.

8. About 30 minutes before serving, stir in the uncooked egg noodles.

9. Continue cooking until noodles are tender.

10. Ladle the soup into bowls and serve hot with crusty bread or a fresh salad.

Notes

Make Ahead: Store leftovers in an airtight container in the refrigerator for up to 5 days.

Freezing Instructions: Freeze the soup base without the noodles for up to 3 months. Add fresh noodles when reheating.

Alternative Proteins: Substitute ground beef with ground turkey, chicken, or Italian sausage for a different flavor profile.

Extra Savory Boost: Add a splash of Worcestershire sauce or soy sauce for extra umami.

Spicy Kick: Stir in red pepper flakes or use spicy Italian sausage instead of ground beef.
