Description

A refreshing, protein-packed spicy cucumber edamame salad made with crisp cucumbers, edamame, and a spicy sesame vinaigrette. Perfect as a quick lunch, side dish, or meal prep option.

Ingredients

  • 1/2 cup frozen shelled edamame, defrosted
  • 1/2 cup diced cucumber
  • 1 Tbsp crumbled feta cheese (or 1/4 avocado, diced)
  • 1 green onion, sliced
  • 1 Tbsp sesame dressing (store-bought or homemade)

Spicy Sesame Vinaigrette:

  • 1 tsp sesame oil
  • 1 tsp soy sauce
  • 1 tsp chili crisp
  • 1 tsp honey
  • 1 tsp rice vinegar
  • 1 clove minced garlic (optional)

For Serving:

  • Tortilla chips or crackers

Instructions

  • Whisk together ingredients for the sesame vinaigrette until combined (skip if using store-bought).
  • Add salad ingredients to a bowl and drizzle with dressing.
  • Toss until vegetables are evenly coated.
  • Serve immediately with tortilla chips or crackers.

Notes

  • For a vegan option, replace feta with avocado.
  • Double the recipe for meal prep and store dressing separately for freshness.
  • Adjust spice level by increasing or reducing chili crisp.
