Ingredients
- 4 boneless, skinless chicken breasts
- 3 jalapeno peppers, diced
- 3 tablespoons olive oil
- 2 tablespoons lime juice
- 3 cloves garlic, minced
- 1 tablespoon honey
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1⁄2 teaspoon onion powder
- Salt and pepper to taste
- Fresh cilantro, chopped (for garnish)
- Optional: lime wedges for serving
Instructions
1. In a medium bowl, combine the diced jalapeno peppers, olive oil, lime juice, minced garlic, honey, ground cumin, smoked paprika, onion powder, salt, and pepper. Mix well to create a marinade.
2. Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that all pieces are well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or for best results, marinate overnight.
3. Preheat your grill to medium-high heat.
4. Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken breasts on the grill.
5. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and the chicken has nice grill marks.
6. Once cooked, remove the chicken from the grill and let it rest for a few minutes.
7. Garnish with freshly chopped cilantro and serve with lime wedges if desired.

Marinating the chicken longer will enhance the flavor; overnight marination is ideal.
