Ingredients
- 4 jalapeños, seeded and diced
- 1 medium onion, diced

- 4 cups chicken or vegetable broth
- 2 cups shredded cheddar cheese, divided
- 8 oz cream cheese, softened
- 1 cup milk
- 1 tablespoon olive oil
- Salt and pepper to taste
- 8 slices of bread (for grilled cheese dippers)
- Butter for grilling
Instructions
1. In a large pot, heat olive oil over medium heat. Sauté onion, garlic, and diced jalapeños until softened, about 5 minutes.
2. Add broth and bring to a simmer.
3. In a bowl, whisk together cream cheese, milk, and 1 cup shredded cheddar until smooth.
4. Slowly stir the cream cheese mixture into the simmering broth until well combined.
5. Season soup with salt and pepper to taste, then simmer for 10 minutes, stirring occasionally.
6. While soup simmers, prepare grilled cheese dippers by buttering bread slices, layering with remaining cheddar, and grilling until golden and melted. Cut into sticks.
7. Serve the soup hot with grilled cheese dippers on the side for dipping.
