Ingredients
Proteins:
- 12 oz fresh or frozen peeled and deveined shrimp
Noodles:
- 4 oz fresh or dried ramen noodles
Aromatics & Sauces:
- 3 cloves garlic, crushed or finely minced
- 1 tbsp fresh grated ginger
- 1โ2 tbsp chili paste or sriracha (adjust to taste)
- 2 tbsp soy sauce (or tamari for gluten-free option)
Broth & Oils:
- 4 cups chicken or vegetable broth
- 1 tbsp sesame oil
Vegetables & Garnishes:
- 2 cups bok choy or fresh spinach
- 3 green onions, thinly sliced
- Optional garnishes: fresh cilantro, soft boiled egg, toasted sesame seeds, lime wedge
Instructions
1. Heat sesame oil in a pot over medium heat. Sautรฉ crushed garlic and grated ginger until fragrant, about 1โ2 minutes.
2. Stir in chili paste and soy sauce, then pour in chicken or vegetable broth. Bring to a simmer and let the flavors meld for 5โ7 minutes.
3. Add the shrimp to the simmering broth and cook until they turn pink and opaque, approximately 2 to 3 minutes. Do not overcook.
4. In a separate pot, cook ramen noodles according to package instructions. During the last minute of cooking, add bok choy or spinach to blanch. Drain and set aside.
5. Divide noodles and vegetables into serving bowls. Ladle hot spicy shrimp broth over the top.
6. Garnish with sliced green onions and any additional desired toppings such as cilantro, soft boiled egg, sesame seeds, or lime.
Notes
Do not overcook shrimp; they become rubbery if left too long.
Adjust spice by starting with less chili paste and adding more to taste.
Use fresh garlic and ginger for best flavor.
