Description

Elegant salmon pinwheels stuffed with spinach, feta, and fresh herbs for a delicious and nourishing dinner.


Ingredients

  • 1 large salmon fillet (about lbs, skinless)
  • 2 cups fresh spinach (chopped)
  • ½ cup feta cheese (crumbled)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons cream cheese (softened)
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • ½ teaspoon dried dill (or 1 teaspoon fresh dill)
  • Salt and pepper (to taste)
  • Toothpicks or kitchen twine


Instructions

  • Heat olive oil in a skillet, sauté garlic for 1 minute.
  • Add spinach, cook 2–3 minutes until wilted.
  • Cool slightly, then mix with feta, cream cheese, lemon zest, lemon juice, and dill.
  • Slice salmon fillet flat, season with salt and pepper.
  • Spread filling evenly, roll tightly, and secure with toothpicks or twine.
  • Slice into 1½-inch pinwheels.
  • Preheat oven to 375°F. Place in a greased baking dish and brush lightly with olive oil.
  • Bake 15–18 minutes, until salmon flakes easily.
  • Remove toothpicks, garnish with dill and lemon, and serve warm.
