Description

This Spinach Artichoke Chicken with Cottage Cheese is a creamy, protein-packed dish that’s easy to prepare and perfect for a healthy dinner. With over 120 grams of protein and minimal carbs, it’s great for low-carb and high-protein diets.


Ingredients

  • 2 large chicken breasts (about 1.5 lbs, boneless skinless)
  • 1/2 cup artichoke hearts (canned or jarred, drained and chopped)
  • Salt, to taste
  • Pepper, to taste
  • 1/4 cup olive oil
  • 1/2 cup full-fat cottage cheese
  • 1/4 cup fresh spinach (finely chopped)
  • 2 garlic cloves (minced)
  • 1/4 cup Parmesan cheese (freshly grated)


Instructions

1. Preheat your oven to 400°F (200°C).

2. Cut the chicken breasts into 1-inch pieces and place them in a large mixing bowl.

3. Add the cottage cheese, chopped spinach, drained artichoke hearts, minced garlic, and grated Parmesan cheese to the bowl.

4. Season with salt and pepper to taste. Mix everything together until well combined.

5. Pour the olive oil into a 9×13-inch baking pan to coat the bottom.

6. Add the chicken mixture into the pan, spreading it out evenly.

7. Bake uncovered for 25–30 minutes, or until the chicken is fully cooked through.

8. Remove from the oven and serve hot.

9. Garnish with extra fresh spinach if desired.


Notes

You can use frozen spinach if fresh isn’t available—just thaw and squeeze out excess water.

For a creamier bake, blend the cottage cheese before mixing it in.

This dish pairs well with a side of cauliflower rice or steamed vegetables.
