Ingredients
- 1 (15.25 ounce) box strawberry cake mix
- 2 eggs
- 1/3 cup oil
- 1 cup mini chocolate chips
Instructions
1. Preheat oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.
2. In a large bowl, combine the cake mix, eggs, and oil. Stir until fully incorporated and no dry clumps remain.
3. Gently stir in the mini chocolate chips until evenly distributed.
4. Using your hands or a medium cookie scoop, form 2-inch balls of cookie dough.
5. Place cookie dough balls on prepared baking sheets, spacing them 1–2 inches apart.
6. Bake for 12 minutes, or until the edges are just starting to brown. The centers will still be soft.
7. Remove from oven and allow cookies to cool on the baking sheet for a few minutes before transferring to a cooling rack.
Notes
You can swap the strawberry cake mix for other flavors like red velvet, lemon, or spice cake. Mix in your favorite chips or add-ins for variety.
Cookies can be stored in an airtight container at room temperature for up to 4 days or frozen for up to 2 months.
To freeze the dough, form into balls and freeze. Bake from frozen at 350°F for 14 minutes.
