Description

Strawberry Shortcake Fudge is a nostalgic, creamy dessert made with layers of strawberry-flavored fudge, vanilla wafers in the center, and a crunchy wafer topping for the perfect sweet bite.


Ingredients

  • 3 cups granulated sugar
  • 3/4 cup unsalted butter
  • 2 tablespoons strawberry gelatin powder
  • 2/3 cup evaporated milk
  • 2 cups white chocolate chips
  • 1 jar (7 ounces) marshmallow fluff
  • 1 teaspoon vanilla extract
  • 1 pinch kosher salt
  • 2 cups vanilla wafers
  • 3/4 cup crushed vanilla wafers (for topping)


Instructions

1. Line an 11×7-inch baking dish with parchment paper and set aside.

2. In a large saucepan over medium heat, combine sugar, butter, strawberry gelatin powder, and evaporated milk.

3. Bring the mixture to a boil and cook until it reaches 234°F on a candy thermometer, about 5 minutes.

4. Remove from heat and stir in white chocolate chips until fully melted and smooth.

5. Add marshmallow fluff, vanilla extract, and salt, stirring until well combined.

6. Pour half of the fudge mixture into the prepared pan and spread evenly.

7. Arrange a layer of vanilla wafers over the fudge, then pour the remaining fudge on top.

8. Sprinkle crushed vanilla wafers evenly over the surface.

9. Allow the fudge to cool at room temperature for about 2 hours, or until fully set, before slicing.


Notes

Use a candy thermometer for best results to ensure proper fudge texture.

Store fudge in an airtight container at room temperature for up to 3 days or refrigerated for up to 1 week.
