This hearty one-dish meal combines seasoned ground turkey with sweet potatoes in a savory tomato-based sauce, finished with melted cheddar cheese for the ultimate comfort food casserole.
Ingredients
- 1 lb ground turkey (93% lean)
- 2 medium sweet potatoes, peeled and cubed into 1/2-inch pieces
- 1 medium onion, diced
- 2 cloves garlic, minced fine
- 1 can (14 oz) diced tomatoes with their juice
- 1 cup chicken broth (low-sodium)
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste (about 1 tsp salt, 1/2 tsp pepper to start)
- 1 cup shredded cheddar cheese (sharp cheddar recommended)
Instructions
1. Preheat oven to 375°F while preparing ingredients.
2. In a large skillet over medium heat, cook ground turkey for 5–7 minutes, breaking it up as it browns.
3. Add diced onion and minced garlic to skillet. Cook 3–5 minutes until onion softens.
4. Stir in cubed sweet potatoes, diced tomatoes with juice, chicken broth, thyme, rosemary, salt, and pepper. Mix well to coat everything evenly.
5. Increase heat to bring to a simmer. Simmer uncovered for 10 minutes, stirring occasionally.
6. Transfer mixture to a greased 9×13-inch casserole dish and spread evenly.
7. Cover tightly with aluminum foil and bake for 30 minutes.
8. Remove foil and sprinkle cheddar cheese evenly over the top.
9. Return casserole to oven, uncovered, and bake for another 10 minutes until cheese is melted and golden.
10. Let rest 5 minutes before serving.

Cut sweet potatoes into uniform 1/2-inch cubes for even cooking.
Don’t skip the stovetop simmering step—this softens the potatoes before baking.
Seal foil tightly to trap steam during baking.
