Ingredients
- 1 pound ground turkey
- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 1/4 cup water
- 2 tablespoons brown sugar
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon grated ginger
- 1 tablespoon cornstarch
- 1/4 cup cold water
- 1/2 teaspoon red pepper flakes (optional)
- 2 cups cooked rice
- 1/4 cup sliced green onions
- 1 tablespoon sesame seeds
Instructions
1. Heat a large skillet over medium heat and add the olive oil.
2. Once the oil is hot, add the diced onion and sauté for 3–4 minutes until softened and translucent.
3. Add the minced garlic and cook for 1 minute until fragrant.
4. Add the ground turkey, breaking it up with a spatula, and cook until browned and no longer pink, about 6–7 minutes.
5. In a small bowl, whisk together the soy sauce, water, brown sugar, rice vinegar, sesame oil, and grated ginger.
6. In a separate small bowl, mix the cornstarch with the cold water to create a slurry.
7. Pour the soy sauce mixture over the cooked turkey and stir to combine.
8. Bring to a simmer and cook for 2–3 minutes to meld the flavors.
9. Add the cornstarch slurry while stirring to thicken the sauce. Simmer for another 1–2 minutes until desired consistency is reached.
10. Stir in red pepper flakes, if using, and adjust to taste.
11. Serve the teriyaki ground turkey over cooked rice, dividing between bowls.
12. Top each bowl with sliced green onions and sesame seeds.
13. Serve hot and enjoy!
