Description

These Thai Peanut Chicken Wraps are a quick, healthy, and flavor-packed meal with tender chicken, crunchy coleslaw, and a creamy homemade peanut sauce.


Ingredients

  • 1/4 cup peanut butter
  • 1/4 cup low-sodium soy sauce
  • 2 Tbsp brown sugar or honey
  • 2 Tbsp rice wine vinegar
  • 1/2 Tbsp minced garlic
  • 1/2 Tbsp minced ginger
  • 1 tsp sriracha sauce
  • 12 Tbsp water (optional)
  • 2 cooked chicken breasts, chopped
  • 3 cups coleslaw mix
  • 1/2 cup grated carrot (optional)
  • 1/4 cup chopped cilantro
  • 1/4 cup roasted salted peanuts
  • 46 tortillas


Instructions

  • Whisk together peanut butter, soy sauce, sweetener, vinegar, garlic, ginger, and sriracha in a bowl. Thin with water if needed.
  • In a large bowl, combine chicken, coleslaw mix, carrot, cilantro, and peanuts. Pour dressing over and toss to coat evenly.
  • Microwave tortillas for 30 seconds to soften.
  • Divide filling among tortillas, roll up tightly, and serve immediately.

Notes

  • For a smoother sauce, microwave thick peanut butter before mixing.
  • Store filling and sauce separately for make-ahead wraps.
  • Adjust spice level by changing the sriracha amount.
