Description

Ingredients

  • 4 cups cooked and shredded chicken (rotisserie chicken works well!)
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded cheddar cheese, for topping
  • 2 cups mixed vegetables (optional)
  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • 1 cup crushed buttery crackers (like Ritz)
  • 1/2 cup melted butter


Instructions

1. Preheat your oven to 350°F (175°C).

2. In a large mixing bowl, combine the shredded chicken, cream of chicken soup, sour cream, and 1 cup of cheddar cheese.

3. If using, add the mixed vegetables and chopped onion. Season with salt and pepper to taste.

4. Pour the mixture into a greased 9×13-inch baking dish and spread evenly.

5. In a separate bowl, mix the crushed buttery crackers with the melted butter.

6. Sprinkle the cracker mixture evenly over the casserole.

7. Top with the remaining 1/2 cup of shredded cheddar cheese.
