Easy Stovetop Taco Soup, ready in just 30 minutes. A family-friendly, flavorful soup loaded with ground beef, beans, corn, and classic taco seasoning.
Ingredients
- 1 pound ground beef
- 1 small onion, chopped
- 1 green bell pepper, chopped
- 2 cups beef broth
- 1 (15 oz) can black beans (do not drain)
- 2 cups diced tomatoes (fresh or canned)
- 1 cup frozen corn
- 1 packet taco seasoning
Instructions
1. Add ground beef, onion, and bell pepper into a large soup pot. Cook over medium-high heat until the beef is browned, about 5–10 minutes.
2. Add beef broth, black beans, diced tomatoes, corn, and taco seasoning to the pot. Stir to combine.
3. Simmer the soup for 20 minutes to allow flavors to meld.
4. Serve hot in bowls and garnish with crushed tortilla chips, sour cream, avocado, cilantro, and shredded cheese, if desired.
Notes
For a spicier version, add a pinch of red pepper flakes or diced jalapeño.
This soup is great for meal prep—leftovers keep well in the fridge for 3–4 days.
Can be made vegetarian by swapping ground beef for plant-based meat and using vegetable broth.
Top with your favorite taco toppings for extra flavor and texture.
