Description
These triple layer brownies are loaded with rich textures and flavors, from the dense fudgy brownie base to the soft, fluffy minty marshmallow layer, and topped with crushed Mint Oreos for the ultimate indulgent dessert.
Ingredients
Filling:
- 1 7-ounce jar Marshmallow Fluff
- ⅛ teaspoon mint extract
- 8 drops+ green food coloring, or to desired shade
Brownies:
- 4 ounces baking chocolate (or 9 squares of TJ’s 72% chocolate bar)
- ¾ cup unsalted butter, melted
- 2 cups granulated sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 2 tablespoons espresso or brewed coffee (optional)
- 1 cup all-purpose flour
- 12 Cool Mint Oreo Cookies, hand-crumbled
Frosting and Topping:
- ½ cup butter or margarine, softened
- 3 to 4 cups powdered sugar
- 1 teaspoon vanilla extract
- Splash of milk, if necessary for consistency
- ¾ cup white chocolate chips, melted
- 18 Cool Mint Oreo Cookies, hand-crumbled
Instructions
1. Preheat oven to 350°F. Line a 9×13-inch pan with foil and spray with cooking spray.
2. In a medium bowl, stir together marshmallow fluff, mint extract, and green food coloring until desired light green shade is reached. Set aside.
3. Microwave chocolate and butter in a large microwave-safe bowl for 90 seconds or until butter is melted. Stir until chocolate is fully melted.
4. Stir in sugar (it will look granular, that’s okay).
5. Add eggs and vanilla extract. Stir to combine. Add espresso or coffee now, if using.
6. Stir in flour just until combined. Do not overmix.
7. Fold in 12 hand-crumbled Mint Oreo cookies.
8. Spread brownie batter into prepared pan.
9. Drop about 1/2 cup of the minty marshmallow mixture over the batter and swirl with a knife to create a marbled pattern. Reserve the remaining filling.
10. Bake for 23 to 25 minutes, or until set. Do not overbake. Let cool completely, about 1 hour (or chill in freezer for 10 minutes if rushed).
11. Make the frosting: Beat butter, powdered sugar, vanilla, and milk (if needed) until fluffy. Alternatively, use store-bought frosting.
12. Melt white chocolate chips in microwave until smooth, being careful not to scorch.
13. Add melted white chocolate and prepared frosting to the reserved marshmallow mixture. Add green food coloring until desired shade is reached.
14. Spread frosting mixture over cooled brownies.
15. Top with 18 hand-crumbled Mint Oreo cookies, gently pressing into the frosting.
16. Let set completely before slicing and serving.
Notes
If you can’t find Mint Oreos, add a small extra splash of mint extract to boost the minty flavor.
You can shortcut this recipe by using a boxed brownie mix and store-bought vanilla frosting.
