Ingredients
- 2 tablespoons olive oil
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 pound ground turkey
- 2 (14.5 oz) cans diced tomatoes
- 2 (15 oz) cans kidney beans, rinsed and drained
- 1 (15 oz) can black beans, rinsed and drained
- 1 (8 oz) can tomato sauce
- 1 cup chicken or turkey broth
- 2 tablespoons chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- ½ teaspoon cayenne pepper (optional)
- Salt and black pepper to taste
- Toppings: shredded cheese, sour cream, chopped cilantro, sliced avocado
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 3–4 minutes until softened.
2. Stir in garlic and cook for 30 seconds.
3. Add diced bell peppers and sauté for 4–5 minutes until tender. Season lightly with salt and pepper.
4. Add ground turkey to the pot, breaking it up with a spoon. Cook until browned and no longer pink, about 5–6 minutes.
5. Stir in chili powder, smoked paprika, cumin, oregano, and cayenne. Toast spices for 1 minute to release flavors.
6. Add diced tomatoes, tomato sauce, beans, and broth. Stir well to combine and bring to a gentle simmer.
7. Reduce heat to low, cover, and simmer for 30–40 minutes, stirring occasionally, until flavors meld and chili thickens.
8. Adjust seasoning with additional salt, pepper, or spices as desired.
9. Serve hot with your favorite toppings.

Make it spicier by adding more cayenne or a diced jalapeño.
