Ingredients
2 bunches Lacinato kale, stems removed and leaves chopped
2 tablespoons extra virgin olive oil
1 Honeycrisp apple, thinly sliced
1/2 cup pomegranate seeds
1/3 cup slivered almonds, toasted
3 tablespoons apple cider vinegar
1 tablespoon tahini
1 tablespoon pure maple syrup
Salt and black pepper to taste
Instructions
Place chopped kale in a large mixing bowl and drizzle with olive oil.
Massage the kale leaves manually with your hands for 2-3 minutes until they become dark, tender, and slightly wilted.
In a small jar, whisk together apple cider vinegar, tahini, and maple syrup to create the dressing; season with salt and pepper.
Add the sliced Honeycrisp apples, pomegranate seeds, and toasted almonds to the kale.
Pour the dressing over the salad and toss well to combine.
Serve immediately or let rest for up to an hour to allow flavors to meld.
Notes
To toast almonds, place them in a dry skillet over medium heat for 3-5 minutes, shaking frequently until golden and fragrant. Ensure you remove the tough center ribs of the kale for the best texture. This salad holds up well in the refrigerator for a few hours due to the sturdy nature of massaged kale.
