Description

Tender ground turkey, fluffy rice, and crisp vegetables smothered in a creamy, slightly spicy bang bang sauce. A quick, wholesome meal bursting with flavor.

Ingredients

1 lb ground turkey
1 1/2 cups uncooked jasmine or brown rice
1 tbsp olive oil
1 bell pepper (sliced)
2 cups snap peas
1 clove garlic (minced)
1/2 cup mayonnaise
2 tbsp sweet chili sauce
1 tbsp sriracha (optional)
1 tbsp honey
2 tbsp rice vinegar
1 tsp sesame oil
1 tsp soy sauce (non-alcoholic)
1/4 tsp salt
1/4 tsp black pepper

Instructions

Rinse rice and cook in 3 cups water according to package instructions
Heat olive oil in a skillet, cook turkey until browned and cooked through
Add garlic and bell pepper, sauté 3-4 minutes
Stir in snap peas and cook 2 minutes
Prepare bang bang sauce: mix mayo, sweet chili sauce, sriracha, honey, vinegar, sesame oil, soy sauce, 1/2 tsp salt, and pepper
Combine cooked rice with turkey-veg mix, pour sauce over bowl and toss to coat

Notes

Use tofu instead of turkey for vegetarian; rice may be cooked ahead
Substitute tamari for soy sauce if preferred
Store leftovers in airtight containers for 3-4 days
