Description

A vibrant Mediterranean-inspired marinade using olive oil, lemon zest, garlic, and earthy herbs to infuse chicken with brightness and savory depth. Perfect for grilling or baking, this recipe ensures juicy, flavorful results with minimal effort using fresh, halal-friendly ingredients.

Ingredients

1/4 cup extra virgin olive oil
Juice of 2 lemons
Zest of 1 lemon
3 garlic cloves, minced
1 tablespoon dried oregano
1 tablespoon dried thyme
1 teaspoon sea salt
1/2 teaspoon black pepper
Optional: 1/2 teaspoon red pepper flakes for heat

Instructions

Combine olive oil, lemon juice, zest, and garlic in a bowl
Stir in oregano, thyme, salt, and pepper
Place chicken breasts (about 1 1/2 lbs total) in a zipper bag
Add marinade and seal, pressing out air
Marinate for at least 30 minutes, ideally overnight
Preheat grill or oven to 375°F (190°C)
Cook chicken 5-7 minutes per side (grill) or roast 25-30 minutes (oven)
Let rest 5 minutes before serving

Notes

For best results, refrigerate marinade leftovers in an airtight container for up to 3 days
Use bone-in thighs for deeper flavor, or skinless breasts for lighter texture
Brush chicken with marinade before grilling for extra char
Substitute fresh herbs for dried if available (1 tbsp fresh = 1 tsp dried)
