Ingredients
1.25 lbs (560g) boneless, skinless chicken thighs, sliced
2 large bell peppers (red and green), sliced
1 large yellow onion, sliced
1 tsp olive oil
1 tbsp fajita seasoning (without pork/alcohol derivatives)
1 cup (240ml) chicken broth
1.5 cups (150g) shredded cheddar cheese
1/4 cup (15g) flour (for thickening, optional)
Corn tortillas or rice for serving (optional)
Cilantro or avocado for garnish (optional)
Instructions
Preheat oven to 375°F (190°C)
Heat oil in a skillet; sauté bell peppers and onions until softened
Add chicken slices, cook until browned
Stir in fajita seasoning and chicken broth
Simmer 5 minutes; add flour to thicken (if using)
Transfer mixture to a 9×13″ casserole dish
Sprinkle cheese over the top
Bake 20-25 minutes until bubbly and golden
Let rest 5 minutes before serving
