Description
Tender chicken pieces marinated in a bold chipotle and honey glaze, grilled to tender perfection. A sweet and smoky favorite for backyard barbecues and family gatherings.
Ingredients
1 1/2 pounds boneless, skinless chicken breasts, cut into 1-inch cubes
1/2 cup honey
3 tablespoons chipotle adobo sauce (from canned chipotle peppers)
2 tablespoons olive oil
1 teaspoon smoked paprika
1 teaspoon garlic powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper
8-10 bamboo skewers
Instructions
In a medium bowl, whisk together honey, chipotle adobo sauce, olive oil, smoked paprika, garlic powder, cumin, salt, and black pepper to create the marinade.
Add the chicken cubes to the bowl and mix well to coat. Cover and refrigerate for at least 30 minutes, up to 4 hours.
Thread the chicken cubes evenly onto bamboo skewers.
Preheat grill to medium-high heat. Lightly oil the grates to prevent sticking.
Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and the glaze is caramelized and slightly charred.
Serve hot, either straight off the grill or with a side of grilled vegetables or a salad.
Notes
Soak bamboo skewers in water for at least 30 minutes before threading the chicken to prevent burning.
For a sweeter glaze, add an additional tablespoon of honey.
Leftover skewers can be stored in an airtight container in the refrigerator for up to 2 days.
