Ingredients
4 boneless, skinless chicken breasts
1/4 cup lime juice (from 2-3 limes)
2 chipotle peppers in adobo sauce
1/4 cup olive oil
1/4 cup chopped fresh cilantro
2 tbsp honey
1 tsp chili powder
1 medium mango, diced
1/4 red onion, finely chopped
1 red bell pepper, diced
1 tbsp lime juice (from 1/2 lime)
1 tsp chili powder
1/4 cup chopped fresh cilantro
Salt to taste
Instructions
Preheat grill to medium-high heat.
Blend lime juice, chipotle peppers, 1/4 cup olive oil, cilantro, honey, and chili powder in a blender.
Marinate chicken breasts in the chipotle-lime mixture for 20 minutes.
Grill chicken for 6-7 minutes per side or until fully cooked (internal temperature 165°F).
In a bowl, mix mango, red onion, bell pepper, lime juice, remaining chili powder, and cilantro.
Top grilled chicken with mango salsa before serving.
Notes
Marinate up to 2 hours for deeper flavor.
Use a grill pan if outdoor grilling isn’t possible.
