A vibrant Tex-Mex-inspired meal featuring tender chipotle-marinated steak over fluffy rice, topped with crisp vegetables and creamy guacamole. Bold, smoky flavors and customizable options make it perfect for families.
Ingredients
1.5 lbs steak (sirloin or flank)
1/4 cup chipotle peppers in adobo sauce
2 cloves garlic, minced
2 tbsp lime juice
1 tsp cumin
1 tsp smoked paprika
1/2 tsp salt
1/2 tsp black pepper
1 cup white or brown rice, cooked
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, sliced
1 avocado, diced
1/4 cup cilantro, chopped
1 lime, cut into wedges (optional sour cream, halal-approved)
1/4 cup salsa
1/4 cup diced tomatoes
Instructions
Marinate steak for at least 30 minutes with chipotle peppers, garlic, lime juice, cumin, paprika, salt, and pepper.
Heat a skillet over medium-high heat; add oil if needed. Cook steak to desired doneness (5-7 minutes per side for medium-rare). Let rest 5 minutes before slicing.
Plate rice, top with sliced steak, bell peppers, onions, and rice. Garnish with guacamole (avocado mix), cilantro, lime wedges, salsa, and tomatoes.
Serve with optional halal-friendly sour cream or extra lime.
Notes
Guacamole can be made 1 hour ahead. Use zucchini or corn for gluten-free grain-free option. Store leftovers in airtight containers for 3 days.
