Ingredients
1 ¼ pounds halal boneless skinless chicken thighs
1 tablespoon olive oil
2 tablespoons freshly squeezed lime juice
1 teaspoon lime zest
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 thin red onion, finely chopped
1 cup halved cherry tomatoes
1 ripe avocado, diced
1/2 cup fresh cilantro, chopped
1/4 cup plain Greek yogurt
1 teaspoon chipotle pepper in adobo (no alcohol, if available)
1 clove garlic, minced
1/2 cup unseasoned rice, cooked (or quinoa)
Salt and pepper to taste
2 limes, cut into wedges
Optional: 1/2 cup corn kernels, steamed
Instructions
Pat chicken dry and season with salt, pepper, cumin, paprika, 1 tablespoon lime juice, and 1 teaspoon lime zest
Toss chicken with olive oil and garlic
Air-fry or roast at 400°F (200°C) for 18-20 minutes until golden and fully cooked
While chicken cooks, mix red onion, cherry tomatoes, avocado, 1/4 cup lime juice, and 1/2 cup cilantro for salsa
In a small bowl, combine yogurt, chipotle pepper, and remaining lime juice
To serve, layer rice in bowls with warm chicken, avocado salsa, and chipotle yogurt sauce
Notes
Ensure chipotle uses non-alcoholic adobo sauce
Substitute quinoa or roasted sweet potato for rice
Add cooked beans (black or pinto) for extra protein
Chickpea flour or plantain can replace chicken for vegetarian version
