Ingredients

10 ripe peaches, about 4 lbs (or 10 cups sliced)
3 tablespoons packed light brown sugar
1 tablespoon cornstarch
1 tablespoon honey
1 teaspoon vanilla extract
1–2 teaspoons lemon juice
½ teaspoon ground cinnamon
2 cups all-purpose flour
1 cup granulated sugar
â…” cup (83g) cornstarch (topping)
1 teaspoon baking powder
½ teaspoon ground cinnamon (topping)
½ teaspoon ground nutmeg (optional)
12 tablespoons chilled unsalted butter, cubed
2 eggs
2 tablespoons milk


Instructions

Preheat oven to 375°F (190°C)
Slice peaches and place in a 9×13-inch baking dish
Mix peaches with brown sugar, cornstarch, honey, vanilla extract, lemon juice, and cinnamon
Prepare topping by combining flour, sugar, cornstarch, baking powder, cinnamon, and nutmeg in a bowl
Cut butter into the dry ingredients until crumbly
Stir in eggs and milk to form a soft dough
Drop spoonfuls of dough over peaches
Bake for 40-45 minutes until golden brown and bubbly
