Ingredients
14 ounces extra-firm tofu, pressed and cubed
1 teaspoon cornstarch
2 tablespoons avocado or coconut oil
1 tablespoon soy sauce or tamari
2 tablespoons hoisin sauce
8 ounces shiitake mushrooms, sliced
2 heads bok choy, roughly chopped
1 tablespoon fresh ginger, minced
3 cloves garlic, minced
2 tablespoons yellow curry powder
1 can (13.5 oz) full-fat coconut milk
4 cups vegetable broth
8 ounces ramen noodles (no-egg style)
Instructions
Toss cubed tofu with cornstarch and a pinch of salt.
Heat 1 tablespoon oil in a large pot and fry tofu until golden and crispy; remove and set aside.
In the same pot, heat remaining oil over medium heat; add mushrooms and sauté until browned.
Stir in ginger, garlic, and curry powder, cooking for 1 minute until fragrant.
Pour in coconut milk and vegetable broth, bringing to a gentle simmer.
Add bok choy and cook for 2 minutes until wilted.
In a separate pot, cook ramen noodles according to package directions, then drain.
Stir hoisin sauce and soy sauce into the curry broth.
Divide noodles into bowls, ladle the creamy curry broth over the top, and garnish with the crispy tofu.
Notes
Ensure the tofu is well-pressed to achieve the best crispy texture. You can adjust the spice level by adding a dash of chili paste if desired. Leftover broth can be stored in an airtight container for up to 3 days, but keep the noodles separate to prevent them from soaking up too much liquid.
