Description

Creamy Taco Soup with Avocado and Lime is a refined, heartier twist on classic taco-inspired soup. It perfectly balances savory seasoned ground beef and black beans with the luxurious richness of heavy cream. Finished with a fresh, cool topping of diced avocado and a bright squeeze of lime, this comforting meal feels both sophisticated and grounding, making it the perfect quick and nourishing dinner for busy families.

Ingredients

1 tablespoon extra virgin olive oil
1 pound ground beef (85% lean)
1 small yellow onion, finely diced
2 cloves garlic, minced
1 packet taco seasoning
1 (15-ounce) can black beans, drained and rinsed
1 (15-ounce) can corn kernels, drained
1 (10-ounce) can diced tomatoes with green chilies
4 cups chicken broth
1 cup heavy cream, room temperature
1 ripe avocado, diced
1 fresh lime, cut into wedges
Fresh cilantro, chopped

Instructions

Heat olive oil in a large Dutch oven over medium heat.
Add the ground beef and cook, breaking it apart with a spoon until browned.
Add the diced onion and garlic, sautéing until softened.
Stir in the taco seasoning to coat the meat.
Pour in the chicken broth, black beans, corn, and diced tomatoes with green chilies.
Bring the mixture to a gentle simmer and cook for 15 minutes to allow flavors to meld.
Reduce heat to low and stir in the heavy cream.
Serve warm, topped with diced avocado, a squeeze of lime juice, and fresh cilantro.

Notes

This soup tastes even better the next day as the flavors continue to develop. Store in an airtight container in the refrigerator for up to 3 days. Ensure the cream is at room temperature before adding to the pot to prevent curdling.
