Description

A rustic Italian-inspired one-pot comfort meal with tender chicken, sun-dried tomatoes, and a silky dairy-rich pasta sauce. This effortless dish combines bold Tuscan flavors—garlic, herbs, and Parmesan—into a velvety cream sauce that coats perfectly cooked pasta for a family-friendly, restaurant-quality experience.

Ingredients

2 pounds boneless, skinless chicken breasts
½ teaspoon salt
½ teaspoon freshly ground pepper
2 tablespoons olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
1 cup sun-dried tomatoes (drained and chopped)
1 tablespoon Italian seasoning
1 cup heavy cream
12 ounces uncooked pasta (penne or fusilli)
½ cup grated Parmesan cheese, plus extra for serving

Instructions

Season chicken breasts with salt and pepper
Heat olive oil and butter in a large pot over medium heat
Add chicken and cook until golden, 5-7 minutes per side
Remove chicken, add garlic to pot, sauté for 1 minute
Stir in sun-dried tomatoes, Italian seasoning, and heavy cream
Return chicken to pot, add pasta, and pour in enough water to cover ingredients
Bring to a boil, then simmer until pasta is tender and sauce thickens, 15-18 minutes
Stir in Parmesan cheese before serving

Notes

Adjust chicken quantity for larger/smaller groups
Use a gluten-free pasta for dietary restrictions
Simmer sauce gently to avoid separation
Leftovers keep in the fridge for 3-4 days
