Ingredients
6 boneless chicken breasts (about 2.5 lbs)
2 tbsp homemade or store-bought BBQ sauce (non-alcoholic)
1 tbsp paprika
1 tbsp garlic powder
1 tbsp onion powder
1 tsp smoked salt
1 tsp ground black pepper
1/2 tsp brown sugar
1/4 cup BBQ sauce
1/2 cup chicken broth
Instructions
Place chicken breasts in the crockpot
Mix spice ingredients in a small bowl and rub evenly over the chicken
In a separate bowl, combine 1/4 cup BBQ sauce with chicken broth and 2 tbsp of a second layer of BBQ sauce
Pour the sauce mixture over the chicken
Set the crockpot to low and cook for 6-8 hours, or high for 3-4 hours
Once done, remove chicken, shred into bite-sized pieces using two forks
Return the shredded chicken to the crockpot and stir to coat evenly in the sauce
Serve warm on buns, salads, or pasta
Notes
Chicken thighs can be substituted for chicken breasts for a juicier result
Always check store-bought BBQ sauce labels for alcohol or non-halal ingredients if avoiding processed additives
Let chicken rest for 10 minutes before shredding for cleaner results
Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for 2 months
