Ingredients
2 lbs (900g) boneless, skinless chicken breasts
2 tbsp (30g) Cajun seasoning blend
1/2 cup (115g) unsalted butter, cubed
1/2 cup (120ml) low-sodium chicken broth
1/2 cup (120ml) heavy cream or half-and-half
1/4 cup (25g) all-purpose flour for thickening
2 tbsp chopped fresh parsley
1 tbsp paprika
Optional: 1 lb cooked shrimp for added protein
Optional: 2 cups cauliflower rice for a gluten-free option
Instructions
Place chicken breasts in the crockpot and sprinkle with Cajun seasoning (save 1 tbsp for garnishing)
Add cubed butter, chicken broth, and toss in 1 tbsp paprika for color
Pour in heavy cream and stir to coat the chicken
