Description

A vibrant, no-cook salad featuring crisp cucumbers and juicy tomatoes, enhanced with a zesty olive oil and lemon dressing. Perfect for summer or as a wholesome side dish.

Ingredients

2 medium cucumbers
2 large tomatoes
2 tablespoons olive oil
1 tablespoon lemon juice
1 small red onion (optional)
salt and black pepper to taste
2 tablespoons fresh parsley, chopped (optional)

Instructions

Peel and slice cucumbers into 1/2-inch rounds.
Chop tomatoes into bite-sized pieces.
Finely dice red onion (if using).
In a large bowl, combine cucumbers, tomatoes, and red onion.
In a small jar, mix olive oil, lemon juice, salt, and pepper to make dressing.
Pour dressing over salad and stir gently.
Add parsley if desired. Chill for 15 minutes before serving.

Notes

Use vine-ripened tomatoes for best flavor.
Add pitted olives or capers for extra Mediterranean flair.
Store in fridge for up to 2 days.
