Description

A hearty, one-pot cowboy soup featuring savory ground beef, tender beans, and vibrant vegetables in a rich tomato-based broth. Comforting and nourishing, it’s perfect for busy weeknights.


Ingredients

1 lb ground beef
1 tablespoon olive oil
1 onion, diced
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
1 can kidney beans, drained
1 can pinto beans, drained
1 can corn, drained
1 can diced tomatoes
4 cups beef broth
1 teaspoon paprika
1 teaspoon cumin
1 tablespoon tomato paste
1 teaspoon dried oregano
Salt and pepper to taste
Optional: 1/2 cup frozen mixed greens


Instructions

Heat olive oil in a large pot. Brown ground beef, draining excess fat.
Add onion, garlic, carrots, and celery; sauté 5 minutes.
Stir in beans, corn, tomatoes, broth, and spices.
Simmer 20-25 minutes until vegetables are tender. Add greens if using, and simmer 5 more minutes.


Notes

Use vegetarian broth for a meat-free version. Add sweet potatoes for extra heartiness. Store leftovers in an airtight container up to 4 days.
